Ingredient Spotlight: Coconaise
Rich in MCT’s, Coconaise is a mayonnaise that is coconut oil based. Unlike most other mayonnaises, this is not soy or canola based. The other ingredients are organic and minimal. This made a great batch of deviled eggs this am, topped with some parsley so there would be “green” for St. Patrick’s Day! 🍀
12 pastured eggs (hardboiled & sliced in ½)
Place egg yolks in a bowl & egg white ½’s on a plate
To the bowl of egg yolks add:
- 5-7 TBL of Coconaise (start w/5 and add to taste & texture)
- 1 Tbl organic yellow mustard
- ½ tsp of Braggs apple cider Vinegar
- 1 tsp Himalayan salt (tt) (I grate my salt for this, but is not necessary)
- 1 tsp ground black pepper (tt)
- Pinch of organic garlic powder
- 1-2 drops of stevia (or stevia glycinate) this is optional; you can also use a ÂĽ – ½ tsp of sweet relish juice; either will balance flavors
With a hand mixer whip the egg yolks until smooth and silky. Taste as this is where you should personalize the recipe.
Spoon the yolk mixture into a BPA-free zip bag. Cut the bottom corner of the bag off taking care not to cut too much so that mixture can be “piped” into each egg white (like a pastry bag). Fill each egg white with yolk mixture.
Top with paprika (smoky or regular) or another seasoning of your choice
*deviled eggs are a great breakfast, or the next day can be mixed with a can of wild salmon or tuna for a quick salad.
